Pineapple muffin slump

I have 17 minutes before I should log on and start working on this Monday morning, but I wanted to say hello. I’m getting bigger every day, which is brings a mixture of alarm, excitement, and so many other emotions I can’t totally pin down. It’s also strange because I’m in a weird phase where, because of my baggy sweater life, you can only really tell from the side view or in person. So sometimes I feel like life is normal and then other times I walk past a mirror and am just shocked. By sometimes I mean several times a day.

Food-wise, I’ve been pretty uninspired but I have been eating so much fruit. Cherries, strawberries, blueberries, tangerines, the first apricots of the season (!!!), kiwi… it’s been a real fruit odyssey lately. Last week, a friend visited for a day and I made muffins (the same recipe I raved about in another post) but this time I subbed out frozen pineapple. All I can say is that it might’ve been my best muffin effort to date.

I’ve been loving the Farmer’s Market and fresh produce, but we’ve been eating it in various bowls (bean + greens + grain) that don’t lend themselves well to photography or recipe sharing. Oatmeal has also continued to be a big thing for me. And rhubarb compote.

Other than that, I’m just trying to stay calm, happy, and appreciative of all the beautiful blooms at this time of year. Until next time!
