Golden potstickers & aloo chaat
Without a doubt, the two most delicious things I made last week were golden potstickers (via 101 Cookbooks) and aloo chaat (via Plant Based India by Dr. Sheil Shukla.)
I filled the golden potstickers cooked yellow split peas, sauteed shallots and minced ginger and served them alongside scallion oil and a simple soy dipping sauce. They’re creamy and so deeply savory and comforting. The three of us (including Drew) absolutely DEMOLISHED the entire batch. I’ve already bought more yellow split lentils to make another batch with the remaining dumpling wrappers in my freezer.
The aloo chaat involved roasted potatoes, diced cucumber, pomegranate seeds, sev, chaat masala, yogurt, lime, and tamarind chutney (store bought). I was almost mournful eating it because we’ve never made it before… so many wasted opportunities!
