Glazed peanut donuts for a long weekend
Today I humbly submit this entry for a slightly healthy, very moist, special little donut. My one accomplishment during this three-day weekend (though it could be argued that my fifth win over Evan in Wingspan and a full rewatch of the final season of Downton Abbey were feats in their own right.)
If you know me, you know that I love peanut butter. Not as much as garlic, but almost. So adaptable for both sweet and savory applications! Delicious on bread, in sauces, straight from the jar! We buy peanut butter with two ingredients: salt + peanuts. We keep it in the door of our fridge (a controversial choice, I’m sure.) And, this weekend, we (I) thinned it out with hot water and some powdered sugar until it was the donut glaze of dreams.
The donuts themselves were a recipe from Vegan 100 by Gaz Oakley and really remind me more of a cupcake in donut form since they’re baked. Flour, salt, baking powder, sugar, a flax “egg”, nutmeg, cinnamon, vanilla, hemp milk, and vegan butter come together in a loose batter that bakes in a donut tray for 10 minutes.
This whole project went from batter to donut to mouth in less than 45 minutes, cooling time included. Next time, I’m going to dial back the sugar in the glaze and make another glaze with blackberry jam for some peanut butter jelly action. But for now, these little guys were a perfect weekend treat.
